A centuries-old sweetener
Kuromitsu 黒蜜 is a traditional sweetener used in Japanese confectionery and has been beloved for hundreds of years. It gets its name kuro 黒 (black) mitsu 蜜 (honey, nectar) from its dark color that also embodies its distinct flavor: a rich but gentle, complex mixture of molasses and hints of caramel.

Why we make it in-house
Off-the-shelf syrups were either too thin or too aggressive — they flattened the matcha. After countless test batches we landed on a house kuromitsu with the molasses-and-caramel depth we wanted and none of the heaviness, so the matcha still leads.

Traditionally served with
Warabimochi
Bracken-starch mochi dusted with kinako and drizzled with kuromitsu.
Anmitsu
Agar jelly, fruit and sweet bean paste, finished with a pour of kuromitsu.
Kakigōri
Shaved ice, in summer, with kuromitsu and condensed milk.
